Summer Squash, Cucumber, Pickling Cukes, Cherry Tomatoes, Lettuce, Onions, Slicing Tomatoes & Cabbage this week!
Yellow Squash Casserole
4 cups yellow squash, sliced
1/2 cup onion, diced
2 Tablespoons water
1 sleeve of buttered cracker rounds, crushed
1/4 cup of butter melted
1 cup shredded cheddar cheese
2 eggs, beaten
3/4 cup milk
salt & pepper to taste
Preheat oven to 350°. In a deep skillet, add squash, onion & water. Cover & cook for 5 minutes or until squash is tender. Remove from heat. Add half the crushed cracker rounds and half the cheese to squash and mix well. Add eggs, milk, melted butter, salt & pepper and mix well. Place mixture in oven safe dish. Top with remaining cracker crumbs and cheese. Bake for 25 minutes.
