Grilled Eggplant
2 small eggplants, sliced a 1/2 inch thick
1 Tablespoon of Honey
2 Tablespoons of Olive Oil
2 Garlic Cloves , minced
1 teaspoons of Paprika
2 teaspoons of Balsamic Vinegar
Salt & Pepper
Lay eggplant slices on a paper towel and sprinkle salt on both sides and let sit 15 minutes. Mix all the rest of the ingredients in a bowl to form a marinade. Pat eggplant dry with paper towels. Dunk eggplants slices into marinade or brush marinade onto the eggplant. On a pre-heated grill place eggplant slices and grill until browned about 5 minutes. Then flip to other side and repeat, basting with leftover marinade. when both sides are brown they are done.
