Week 9- 2015

Full Share: Green Cabbage, Beets, Green & Purple Peppers, 2 heads of Lettuce(TBD), Tomatoes(Heirloom , Cherry, Saladette & Red Tomatoes),Cucumber, Summer Squash, Zucchini & Scallions.

Cabbage Roll Casserole

2 pounds cabbage, roughly chopped

2 tablespoons olive oil

1 pound ground beef

1 large onion, chopped

4 cloves garlic

1 teaspoon tomato paste

½ cup tomatoes, diced

¼ cup chopped parsley

½ teaspoon black pepper

Salt & Pepper to taste

1 and ¾ cup cooked rice

2 tablespoons lemon juice

1/4 cup raisins, optional

Preheat oven to 350°. Heat a pan on medium heat and add ground beef. Cook until it is no longer pink, no need to cook through. Add onion, garlic and olive oil and cook stirring for 5­ minutes. Add in tomatoes and tomato paste and stir well. Season with salt & pepper. Add cooked rice, lemon juice, chopped cabbage & optional raisins. Cook over medium low heat for 10 minutes. Spray a casserole dish with olive oil. Pour the mixture into it and bake for 45 minutes.

Sauteed Cabbage

1/2 a head of cabbage, sliced into 1/2 inch thick slices

salt & pepper to taste

2 tablespoons of butter or olive oil or alternately you could add a meat like bacon, sausage or kielbasa.

Heat a skillet over medium heat. Add the butter or olive oil or diced bacon, sliced sausage or kielbasa. If using butter or oil add the cabbage once the oil has heated, if using meat cook until some of the juices are released from the meat, then add cabbage. Season with salt & pepper and cook for about 15-20 minutes stirring occasionally until cabbage is translucent but still firm and meat is cooked through.
