Vitamin Green Pesto & Kohlrabi Pizza

½ kohlrabi, sliced thinly

1 bunch of vitamin greens

2-3 Tablespoons of oil

2-3 Tablespoons of goat cheese or parmesan cheese

¼ cup walnuts or almonds

½ cup mozzarella, cut in thin pieces or shredded

salt and pepper

pizza dough

Preheat oven to 500. While oven is heating roast the sliced kohlrabi on a lightly oiled baking sheet. Roast the kohlrabi until it is begging to turn golden brown on the edges. Make the pesto by pureeing the vitamin greens (leave a few nice leaves for the top of the pizza), oil, cheese, nuts, and a teaspoon of salt. Stretch the pizza dough and spread the pesto over the dough. Top with the sliced mozzarella, leaving gaps between the cheese to let the pesto show. Top this with the roasted kohlrabi, the extra vitamin green leaves & a bit of salt and pepper. Bake on a baking sheet, pizza pan, or baking stone according to the pizza dough’s instructions usually about 7-10 minutes.

We Picked the first Sungold Cherry Tomatoes out of the field on Sunday morning. It was only a handful but it means that they are on their way to producing an enormous amount of orange goodness! Now all we need is warm days and warm nights to keep the tomatoes ripening.
