This week there will be Lettuce, New Potatoes, Tomatoes, Cucumber, Sweet Peppers, Fresh Garlic, Green Onions & Kale.
New Potatoes are not the same as the small creamer potatoes found in the store. The skins are delicate and rub off easily. It would not be ideal to scrub them as you would a regular potato, but rather rinse and remove dirt gently with your fingers.
Roasted New Potatoes
1 lb New Potatoes, carefully cleaned
2 Cloves of Garlic, Minced
1 1/2 Tablespoons Olive Oil
Salt & Pepper to taste
Preheat oven to 400° In a bowl place new potatoes and add garlic, olive oil, salt & pepper. Stir ingredients and place potatoes in a shallow baking dish. Bake until fork tender about 30 to 40 minutes.
Grilled Caesar Salad
1 head of Romaine
Salt & Pepper
Shredded Parmesan Cheese
Heat up grill. Cut romaine in half lengthwise leaving core intact. Place cut side up and spray or drizzle with olive oil and sprinkle with salt and pepper. Place romaine halves cut side down on grill and cook 2 to 3 minutes. Turn over and cook 2 more minutes. Place on serving dish cut side up, drizzle with dressing and sprinkle with cheese. You can use any type of dressing or any type of cheese, add cut up cherry tomatoes or cucumber to switch things up.
